Our sucuk production has ten steps and each one keeps a written record. Every photograph below was taken in our own facility.

The meat to be used in sucuk production is selected and prepared separately before production. Meat that is unsuitable for the product or left over from other production is never used; only the cuts set aside for sucuk enter the process.

The spices used in sucuk are carefully selected and weighed in the amounts set by our recipe. We mill some of these spices ourselves and source the rest from trusted suppliers.

In the first stage, the selected meat is ground through a coarse plate. This prepares it to be blended with the spices and other ingredients in the following steps.

The ground meat is transferred to the mixer together with the spices and the other ingredients used in sucuk production. Everything is kneaded until the blend is fully homogeneous.

The prepared sucuk blend goes back through the grinder for a finer grind. At this stage, sinew is separated from the meat so the blend reaches the consistency needed for filling, with the sinew content reduced to a minimum.

The blend is transferred to the filling machine. From here it moves on to the filling stage, ready to go into natural casings.

Natural casings, soaked and prepared in advance, are fitted to the machine and the sucuk blend is filled into them under control.

Each filled sucuk is checked individually and hung on lines. Arranging and hanging them properly matters for the baking stage that follows.

The hung sucuk is baked at the temperatures set for our production conditions, allowing it to mature under control and develop its characteristic texture.

Sucuk that has completed production is prepared for sale. Products are labelled as required and made ready for dispatch and for sale in our branches.
